Tilapia with Quinoa and Black Beans

Last weekend I made a new recipe that I’m sharing with you today. I mixed something new with an old favorite. We usually eat tilapia with brown rice, but while shopping I came across a large package of organic quinoa and decided that it would be worth trying … and it was! Here are the recipe details:

Tilapia and Quinoa

Tilapia

Tilapia Ingredients
4 Fillets Tilapia
2 Tsp Canola Oil
.25 Tsp Old Bay Seasoning
Juice of Half of a Lemon

Tilapia Cooking Instructions

  • Preheat oven to 375 degrees F
  • Place the tilapia fillets on large baking sheet
  • Brush with Old Bay seasoning and oil
  • Top each with a spritz or two of lemon
  • Bake for 25 to 30 min in preheated oven

Quinoa and Black Beans

Quinoa and Black Beans Ingredients
1 Tsp Canola Oil
1 Chopped Onion
3 Tsp Minced Garlic
.75 C Dry Quinoa
1.5 C Vegetable Stock
1 Tsp Ground Cumin
.25 Tsp Paprika
Salt & Pepper to Taste
1 C Fresh Frozen Corn
.5 Lb Black Beans – Soaked/Rinced & Cooked as directed
.5 C Fresh Chopped Cilantro

Cooking Instructions for Quinoa and Black Beans

  • Over medium heat, heat oil in medium pan
  • Saute garlic and onion until lightly browned
  • Add quinoa to pan and stir in vegetable broth
  • Season with cumin, paprika, salt & pepper
  • Bring to a boil
  • Cover, reduce heat to simmer 20 min
  • Stir corn in and continue simmering 5 min until heated through
  • Mix in the black beans and cilantro
  • Plate, top with fish, serve

We all really enjoyed this recipe. My three year old isn’t keen on foods too powerfully flavored or too heavily spiced. You could substitute the paprika for cayenne pepper if you like a little kick to your palate.

Quinoa is a new food to our family. I encourage everyone to learn about its health benefits. It is great for your muscles as it is high in protein and magnesium! It is gluten free and also known as a super food.
